This dish is a family favorite--it's quick and delicious!  Frozen peaches (add 1/2 cup of water to have extra juice) or canned peaches will work as well.


1 can 15 oz. peaches (with syrup)*
1 tsp cinnamon
1 tsp vanilla
¼ cup sugar


½ cup all- purpose flour
1 tsp baking powder
½ cup milk
½ cup sugar
¼ stick butter (room temperature)

Preheat oven 350°.  Place butter in baking dish and melt in oven.  Mix filling ingredients over medium high heat until syrup is slightly thickened (syrup will coat the back of spoon).  Turn off heat.

* (If you use fresh peaches, mix ¼ cup of sugar with ½ cup water then follow recipe as directed. Make sure the sugar is dissolved before you turn off heat). 

In a separate bowl mix flour, baking powder, 1/2 cup sugar, and milk together in mixing bowl and stir until smooth.

Remove baking dish from oven when the butter has melted.  Pour crust mixture into melted butter.  Pour peach mixture on top of crust mixture.  DO NOT STIR.

Bake 20-30 minutes at 350°.  Crust will rise to the top and brown.
